Allergen rules

Every Sous Chef menu is designed to be dairy-free, sesame-free and nut-free.

  • Do not add dairy, sesame, peanuts or tree nuts.
  • No butter, cheese, cream, ranch, tahini, sesame oil or sesame seeds.
  • Check the ingredient label of every purchased product for allergens and cross-contact.
  • Do not substitute your own sauces without checking the recipe and allergen requirements.
  • Contact Sous Chef before any substitution.

Purchased-ingredient label checks

  • Check bread labels for dairy and nuts, and use bread without sesame seeds or sesame cross-contact.
  • Check every purchased ingredient label for dairy, sesame, peanuts, tree nuts and cross-contact.
  • Check hot honey labels for prohibited allergens.
  • Check noodle labels: many noodles contain egg, and some are made on lines that handle sesame.
  • Check tortilla labels for dairy, sesame and nuts. Many flour tortillas contain lard; use a lard-free tortilla for vegetarian items.
  • If the kitchen breads its wings, use a thin coating and check it for dairy, sesame and nuts.
  • Tofu is soy. Check the label for sesame cross-contact.
  • Use a dairy-free biscuit. Standard biscuits usually contain butter or buttermilk.
  • Verify Korean chile products contain no sesame or problematic cross-contact.
  • Verify all purchased meats are dairy-free, sesame-free and nut-free.
  • Verify the miso contains no sesame or other prohibited allergens.
  • Verify the mustard contains no prohibited allergens.
  • Verify the roast beef is dairy-free, sesame-free and nut-free.
  • Verify the soy sauce contains no sesame or problematic cross-contact. Most soy sauce contains wheat.
